You might think to yourself, what makes former pharmacist, Dennis Chan open a fried chicken food truck in Sydney’s west? Well in some sort of deep fried epiphany, the owner of Dirty Bird Food Truck was awe-struck by the flavours of fried chicken whilst on holiday in Nashville. What he has created is absolutely somewhere that Guy Fieri and his infamous ‘Triple D’ team would stop for a trip to flavour-town.
“I remember thinking to myself, wow we need this in Sydney, this is it, this will be my product, I thought how can I make fried chicken awesome.”
After a yearlong process fine-tuning the recipe, Dirty Bird food truck was born. The crowning jewel is the Chicken wings which take an immense 12-hour bath in a secret brine before being lightly battered and deep fried. Dennis won’t tell all his secrets but has revealed that flecks of his Asian heritage have leaked into the recipes for his chicken with ginger and soy in the marinade.
“Our flouring process is much thinner than what people are used to, I don’t want it to be flouring, we are going for a crust that is thinner and lighter. Between a deep fried chicken and a crispy skin.”
The Menu is concise and delicious with the standards of wings, served with slaw and pickles, umami fries topped with nori (seaweed), mash and gravy that puts the likes of KFC to shame and rice bubble battered burger (say 10x fast) which is perfectly crunchy leaving the chicken super tender .
