The Botanica Vaucluse, formerly known as Sol Botanica, is a food and lifestyle destination that taps in to the importance of seasonality and freshness to coincide with its spa and soon to open café.
Upon entering The Botanica Vaucluse you’ll notice It’s manicured garden and copper archway with hanging succulents that lead you into a dining room of pink chairs and beautiful botanic themed wallpaper.
However despite The Botanica Vaucluse’s beauty, it has a firm focus is on farm fresh food, with a 65-acre farm in Jamberoo Valley in the Kiama Hinterland, the restaurant and surrounding compound, centres itself on a commitment to growers and seasonal ingredients.
The Botanica is headed by Executive Chef Perry Hill. It is Hill’s modus operandi to utilise as many ingredients he can from the kitchen’s garden and Jamberoo Valley farm that informs his creativity, one day smoking salmon over Eucalyptus branches from the farm, the next picking native blood limes to awaken the tuna tartare.
“We’re responding to the seasons in a really immediate and natural way…we’re not overthinking or complicating things”. Hill explains.
Hill focuses on three or four ingredients on a plate that are emblematic of the season to formulate the menu. In Autumn to Winter, that could mean anything from the use of sweet potatoes for golden gnocchi, or rhubarb from the farm for a simple tart. Hill sources other Australian-grown produce from the esteemed Cook’s Co-Op in Sackville, with pasture raised ducks and O’Connor beef to ensure his farm to fork vision isn’t compromised.
To compliment the food is a range of drinks, like the Lemon Myrtle Gimlet, made with Coopers Gin and house made Lemon Myrtle Syrup, or a Garden Grove Spritz, with Miadenii Dry Vermouth, elderflower, Bress sparkling, cucumber, mint and frozen grape alongside a range of natural, organic and biodynamic wines from across the country.
If you’re after a full day of pampering yourself, next door is Sol Spa, offering a number of treatments to help you feel your best. In July, Valley Farm Café will be joining The Botanica Vaucluse where guests will be able to sample a farm fresh, café menu as well as fresh produce to take home.
