In what is obviously a match made in heaven, Merivale and Pimm’s are joining forces to transform Coogee Pavilion’s rooftop Glasshouse into a jaw-dropping London style oyster bar. Opening it’s doors this Friday 9th March, Pimm’s Oyster House will offer classic iterations of the lauded and loved gin-based Apertif as well as specially made cocktails to go with your freshly shucked oysters every weekend until 3rd April.
Drawing inspiration from the oyster bars of London, the pop-up will serve shucked to order Sydney rock oysters, either au natural or partnered with the Pimm’s mignonette. The mignonette was created specifically by Coogee Pavilion’s Executive Chef, Jordan Toft to bring the best out of the oyster by melding it with Pimm’s fruitiness and the acidity of vinegar.
You can relax with half dozen ($21) or a dozen ($42) oysters to pair with a Pimm’s available in cups ($10) or jugs ($30). Gordon Purnell, the mixologist in charge has created a range of four Pimm’s cocktails available only at the Oyster Bar. ‘Oyster House Club’ - Pimm’s, Tanqueray, Antica Formula, Absinthe and lemon zest; ‘Pimm’s Pony’ - Pimm’s, lemon, orange bitters, pale ale; ‘Acapulco’ - Pimm’s, passionfruit, orange, vanilla, bitters and tarragon; and ‘West End Sling’ - Pimm’s, Grand Marnier, Tanqueray, pineapple, grenadine and sparkling wine.
Pimm’s Oyster House plays on the history of the iconic aperitif, with the Coogee Rooftop transformed by vintage Pimm’s posters, photographs of the English landscape, antique mirror table-tops and marble finishes. Pimm’s Oyster House is open 12pm-10pm, Friday 9th March to Sunday until 3rd April, with special Pimm’s offers available across Coogee Rooftop all week.
