Aki Daikos is no stranger to hospitality, having previously opened and collaborated in a swathe of Café’s around Sydney including Gasolina and Tella Balls. In his latest venture, The Good Filo, Daikos plans to bring the filoxenia (Greek hospitality) of Thessaloniki to Sydney.
“I just wanted to bring the Greek Social atmosphere and hospitability experience to Australia, I would go to Thessaloniki, come home, and feel that something was missing.”
The Good Filo is a bakery, an eatery and a zaharoplastio (patisserie). Head baker Kiriakos Metaxotos, a Thessaloniki native, is in the kitchen baking at midnight, preparing the fresh bread and desserts for the 6am open. There’s a village style bread and a Greek sourdough, as well as all the desserts you’d expect from a Greek eatery.
Greek standards like Galaktoboureko, the semolina filled filo pastry with orange syrup; a Bougatsa, another variation of semolina custard filled filo, served warm as well as a range of biscuits to take home are all on offer. However it doesn’t end at traditionalism for The Good Filo, with Aki’s creativity shining through with dishes like the Galaktobourekocroissant, a croissant filled with the cream of a Galaktoboureko, or a Tsoureki, a sweet bread saved for Easter made in a variety of flavours including Oreo and Nutella.
As the day goes on The Good Filo transforms. At 11:30am it becomes an eatery where you can sit down to eat whatever is in stock for the day. Some days it’s Pastitso, a Greek style lasagne made with penne and other days its Yemista, vegetables stuffed with a mine and rice filling.
“Everything here is made by hand, all my pastry and bread is made by head baker Kiriakos Metaxotos…. There aren’t any cut corners here.” Daikos explains.
As for the space, it’s all about relaxed comfort. The casualness that you find in Thessaloniki, it’s the type of place that you can pop in for 5 minutes or sit and have a chat with friends over a traditional frappe. You walk in and peer in to the long bay of sweets, savoury and cakes.
“I just felt like now was the right time to do something like, something that’s really for the Greek community. There’s a lot of people coming from over there, looking for work and looking for something that’s like home.”
