What started as a food stall at Paddington Markets has now turned into a shopfront for couple Tania Ho and Ben Sinfield. The pair have opened Banh Xeo Bar, a Vietnamese eatery that is serving up traditional Vietnamese dishes with a contemporary modern edge.
The pair met in a restaurant in London at the renowned St John. Tania was working front of house, and Ben was working in the kitchen. After a few years of working in the business, and some impressive restaurants on his CV like Fred’s and ester, Ben and Tania decided it was time to open their own business.
“We just felt like it was time for us to do our own thing, have our own food business, and after the (Paddington) markets, we thought this would be the next step. The shop lets us be more creative and expand our menu, especially for Ben, he can bring in other dishes.” Tania explains.
Banh Xeo is dedicated to the Vietnamese crepe. It stars on a simple, rotating menu that tries to keep everything fresh and interesting. Banh Xeo can be stuffed with whatever your heart desires, although Ben and Tania try to keep it semi-traditional with classic Vietnamese flavours like a pork cheek and king prawn Banh Xeo utilising Australia’s great produce.
“I used to come home from work, and Tania used to make me these [Vietnamese crepes] and I just thought they were so tasty and delicious.” Ben explains.
“It’s really just the stuff that we like to cook and like to eat.” Tania adds.
The pair use Tania’s mum’s traditional Vietnamese cooking as inspiration citing her as a major influence and part-time stock master, who with a careful eye watches over the Bun Bo Hue and a crab cake soup Bun Rieu. This influence combined with Ben’s skills in the kitchen have led to a range of great uncommon Vietnamese or Vietnamese inspired dishes, like the Bone Marrow with lemongrass and chilli, served with toast for you to decadently spread the marrow on.
“The roast bone marrow that’s a dish based on the restaurant where we met, it’s not a Vietnamese dish but it’s done in a Vietnamese way.” Says Ben
The space is clean, bright and white, with flecks of colour added in the way of pink stools for sitting on and a bright pink neon light. Banh Xeo Bar is also BYO, which compliments having The Drink Hive in the same complex.
