The timing could not be more perfect for the new Bondi Beach Public Bar (BBPB). Open as of Wednesday the 20th, the new Bondi haunt is sure to be a hit with the experienced Maurice Terzini and Executive Chef Monty Koludrovic of Icebergs Dining Room and The Dolphin fame putting the pieces together.
The 300 person venue sits underneath the Pacific Bondi Beach complex, also home to the QT hotel. However beyond the ritzy address and stellar crew, the idea is that BBPB is what it says it is, a public bar.
“Whenever I am asked what BBPB will be I reply very simply that it’s a Public Bar…It takes pride in being a bar that represents Sydney and Bondi Beach today whilst maintaining the simple qualities that a Public Bar should have…community values, good food and a simple cold beer.” Explains Terzini.
Despite Terzini’s ethos regarding BBPB, you shouldn’t expect your run of the mill chicken schnitty. Think, Pizza, flat and crispy with distinct U.S influences. The Squish burger, inspired by VICE Munchies famed chef Matty Matheson, and a homage to good friend Morgan McGlone’s hot chicken, cutely named Bella’s. It’s a collaborative feel, there are bits of Sydney, Bondi and beyond all over the place.
James Hird has developed a short and concise wine list, with only 12-15 wines, all of which are affordable and very drinkable. For me drinkability is key, I really hate not being able to drink wine when I hit a pub”, says Hird. Combine that with a great cocktail list, with re-interpreted classics like the Harvey wallbanger or a White Russian with a Mr. Black twist, you know there is plenty to offer.
The venue is big, and didn’t escape Terzini’s sharp eye for design. “Design will be sharp, raw, contemporary, punk, with lots of grey, white and black and lots of concrete.” Says Terzini. Unlike the image of most public bars, its modern, representing the people, and Is sure to be a big crowd pleaser this season.
