Fresh: Hotel Centennial

Maybe not fresh, but re-freshed, as Hotel Centennial, the newly acquired property by Merivale is now open with a very fancy team presiding over the food. The Paddington’s Executive Chef Ben Greeeno will be looking after things, collaborating with star of Fred’s, Danielle Alvarez on the dining room and bar menu.

Alvarez and Greeno share a documented love of quality produce and simplicity, the pair have curated a menu, influenced by the Mediterranean and seasonal produce. In the kitchen whipping it all together will be head chef James Evangelinos.

“This is a nod to Southern Europe; food inspired by the season and what people want to eat”, explains Greeno.

On the menu will be a selection of wood-fired flat breads, with minced lamb, merguez, yoghurt and pickled chilli’s, or fennel, greens and garlic cream. Seafood will dominate the menu with dishes like wood oven squid with aioli and cherry tomatoes, followed by grilled flounder with seaweed salsa verde.

Dessert will be a starring on the menu, with dishes like a lemon verbena custard tart with fresh peaches and nectarines, or roasted fids, rose, yoghurt sorbet.  Classic fresh, fruit based dessert that relies on the quality of produce.

The bar menu will be filled with simple snacks that will echo the Mediterranean influence on the dining menu. Simple snacks like the grilled fish with rocket and lemon. The bar will also have charcuterie and cheese with their wood fired flatbreads. Perfect for having a few drinks.
