Proving that you don’t need to live in the trendiest inner city suburbs to experience the very best of Sydney’s café culture, is Four Little Foxes, an otherwise secret haunt adored by its regulars. Opening in July of 2016, partners Maya Garpenfeldt and Nathan Nash decided to open their café in the suburb of Milperra, hidden off the M5 corridor.
The pair have worked in hospitality for over 15 years, doing large stints in Europe, where the pair met on the Greek Island of Ios.
“Nathan plays guitar and I used to sing, and we used to play together in bars and pubs, I did 7 European summers, Nathan did 5.”
Romantics aside the pairs decided that it was eventually time to come home and had always thought about opening up a little shop in Milperra.
“Nathan grew up out here, Nathan’s family lives down the road, we’ve always had our eyes on this spot, and we kinda figured the area needed something like this, something a bit different that we could introduce.”
Their chef is Karl Paino, who firmly believes in making everything from scratch, with anything up to 90% of the stuff produced for the café made in house. The café style food is innovative at Four Little Foxes, with Paino often borrowing flavours and techniques from Australia’s multicultural repertoire, which appear on his specials board.
“We don’t’ want to do the same thing as everyone else, we want to be innovative and hopefully people recognise that eventually.”
As for coffee, that’s Nathan’s department. They use their own roast, which has been made specifically for them. They also have a range of guest roasts every month which they offer, with the likes of Reuben Hills, Single O and other notable names all being featured from month to month.
“I think that’s what makes it work, we are all so invested in our own section, everything we do has so much heart and soul.” Maya explains.
The fit out is light and simple, with the large Four Little Foxes insignia embossed on the wall. It’s a friendly and inviting space that mixes tiled tables, and wooden seats with wrought iron seats.
Four Little Foxes is a comfortable café that would be on the tip of everyone’s tongue if it were in a suburb like Newtown, but maybe that’s part of the appeal. The local friendliness paired with the quality of coffee and food is the best part.
