Newly opened ‘Chula’ on Kings Cross’ Bayswater Road is set to change the way Sydney eats Mexican. Located in the Old Hugo’s Pizza site, the team of Nicole Galloway and Peter Lew (Barrio Cellar) are bringing a contemporary take on Mexican cuisine.
“Mexican is a very special culture and cuisine so we wanted to create a menu that celebrates the rich traditions and flavours, while treating it with a contemporary hand. Simple food that’s seriously flavourful and visual”. Explains Galloway
The food is set to reflect an unadulterated approach to Mexican flavours, with seafood and vegetables starring on the menu. There will a be a range of tostadas, aguachile, ceviche and charcoal whole fish as well as Chula’s ‘Tlayuda’, an Oaxacan dish that is a Mexican tribute to pizza.
Cocktails are going to be focused on the fresh, vibrant and seasonal fruits of Mexico. And with Reece Griffiths behind the bar, (founder of the Agave Cartel), you know that there will be a strong focus on agave spirits. The wine list deeply textural and aromatic designed to compliment the nature of the Mexican cuisine.
The design of Chula by Joshua Clapp from Steel + Stitch is heavily inspired by the rich colours and textures of Acapulco and Tulum. It’s reminiscent of the Mexican countryside with its earthy tones, old-world charm and collected timber, matched with organic hand-woven pendants and quirky linen fabrics.
Chula is a bit of a passion project for Galloway and Lew as the couple first met at Hugo’s Pizza in 2009. The pair are directly trying to reinvigorate one of the most iconic area’s of Sydney.
“King Cross has gone through an enormous amount of change over the last few years, and the idea of it coming back to life with new residential projects, bars, eateries and retail is an incredibly exciting prospect”. Says Galloway.
