Feeling sad that summer is over? If you feel the relentless chill of winter coming and you’re not lucky enough to have booked a holiday in the European sun, fear not!
Can Cava is a Spanish inspired pintxos (Pin-Chos) bar in beautiful Bondi. You can now pretend that you are in sunny San Sebastiàn, without having to go abroad.
The team behind Can Cava include partners, Dani Steger and Tristan Terry, bringing with them from Barcelona Oriol Cortes Fuste. The team are working with head chef Jon Cowan (ex- The Lodge) to create fresh, snack sized flavour bombs.
Dani explained to Grub the concept and inspiration behind the eatery. “Pintxos is really popular in the northern region of Spain, most famously in San Sebastian and Barcelona, where basically you get your plate and fill it with bar snacks.”
Traditionally, these snacks are waiting on the bar held, together with a toothpick, each one having a different colour that denotes the price of the snack. “Kind of like the way the sushi trains over here work out pricing.”
However the Bondi version pintxos is focused on providing made to order, Australian produce driven version of these bar snacks, served with a drinks list that is exclusively Spanish.
“Cava is the sparkling Champagne of Spain, and Can is Catalan, for house. So basically house of Champagne if you wanted to directly translate it.”
“For us we wanted people to feel like they had stepped into one of those little bars off the side streets of San Sebastian or Barcelona, we wanted to have that kind of exclusivity with those types of wines.”
Dani recommends the classic Spanish snacks for the first timer: “The Pan con tomate ($4), bread rubbed in tomato and garlic. Pintxos wise, you can’t go past the Goat’s cheese croquette ($6), and another really popular dish is the Tuna tartare ($8), on the home made potato chip.”
If you’re after something a little bit larger to share with your friends, then there are cheese ($23) and charcuterie ($26) plates to share between friends that will go down perfectly with a glass of Spanish sparkling.
The Alfajores ($4) make a great sweet, they are basically a shortbread filled with dulce de leche and is served with Pedro Ximenez ($12) is the perfect ending to your long lunch, afternoon drinks or date-night dinner.
Can Cava was transformed from the old Bondi Picnic Site into a little piece of Spain by interior designer Studio Ally.M and Builders Hatch Constructions, which in conjunction with the pintxos and Spanish drinks list drives an as authentic as possible experience.
Bondi beach provides the perfect location to recreate the relaxed atmospheres of Spain so you can escape the winter blues.
