Hotel dining has never really been a thing in Sydney – the allure of potentially great food has never been enough to get patrons past the guard of the hotel lobby. Hoping to create a new paradigm of hotel dining, Sydney’s Four Seasons Hotel has launched an adventurous new dining experience in their elegant restaurant Mode Kitchen & Bar, bringing Australia’s best product to light.
“The Celebrate Australia series is our way of championing the amazing stories and people behind Australian produce, both for our local Sydney diners and those travelling from afar,” explains Executive Chef Francesco Mannelli.
In what is an ambitious effort to tackle the ever-ambiguous Modern Australian cuisine, the collaborative series, Celebrate Australia launches this week, focusing on the quality of produce in various regions around Australia. The series begins with a new menu that highlights South Australia’s renowned excellence in producing food and wine. With access to great seafood, glorious wine country and fantastic graziers, Mannelli was spoilt for choice in settling on suppliers for the dishes, however settled on producers such as Goolwa Pipico, Clean Seas Seafood, Mayura Station Wagyu and Woodside Cheese Wrights.
Bringing South Australian produce to the plate, Mode’s Executive Chef Francesco Mannelli champions the ingredients. For Mannelli, keeping it simple is the key to highlighting the quality of the produce. Guests dining on the new menu can experience dishes like sautéed Coorong Pippies, Hiramasa kingfish sashimi with sour sauce and macadamia or a grilled Mayura Station Wagyu Tri Tip MB 9+ with roasted balsamic onions. As the series continues, Mannelli will try to represent the regions and their strengths through his laser-like focused approach.
“We are so fortunate to live in a country that produces such a wonderful variety of beautiful and top-quality ingredients. The producers we have chosen stand out because they are all unique in their way,” says Manelli.
